Course Outline

This intensive 7-day course is led by one of the Garden Route's most beloved food enthusiasts and is designed for anyone interested in private cheffing, whether for personal enjoyment or professional service. The material focuses on providing an in depth understanding of the benefits of plant-based and vegetarian cuisine while mastering techniques to make delicious nutrient dense food.

Practical topics covered will include: main meals, healthy sweet treats, juices, smoothies, shots, tonics, elixirs, breakfasts, snacks, soups, light meals, salads, fermented foods and sea vegetables. The course is followed by an opportunity to gain experience working in an established restaurant kitchen.

  • Phytonutrients, Antioxidants by color.

  • Different dietary patterns

  • Traditional Diets, Inuit, African, Asian, Mediterranean, Ancestral/Paleolithic.

Implementing of Tourism Committee and one of the Fist Farm Markets in the western Cape with a variety of traditional elders, Art, Food, Music and Potjie Kos with Matie Brink and the Mayor. Owner of numnum Food shop 3 years in Knysna next to Isle du Pain – Introducing Organic and Quality Foods to Knysna that are healthy with a Shop that was interesting very Creative with new foods and ancient foods. 5 Years facilitation food workshops and 9 years Facilitating Detox, Food and Restorative Retreats. 3 years at Kwendalo Wellness Retreat – Implementing Green Café and training the staff.
